The Double Fry Method. A path to sublime crispiness.

Up until a few months ago, I had a serious problem with the texture of my chicken wings. No matter how crispy the skin was when they were fished out of the oil, as soon as the sauce went on, it was a pretty fast and inevitable countdown to sogginess. After our last (and first) recipe post, I was really excited to whip up some massaman wings for a group of friends. Despite working in small batches and holding the cooked wings in a warm oven to ensure a nice and crisp final product, they didn’t even make it from the saucing bowl to the table before losing all that crunch I had worked so hard to preserve.

While their take on massaman wings was quite serviceable by any account, they weren’t exactly what I had imagined or hoped for when ordering them. That said, they are running an absolutely fantastic restaurant, both in terms of food and service, and are well worth a visit. Continue reading

I Might Have a Gambling Problem: Super Bowl Edition

vuDGEOM (1)Super Bowl XLVII is finally among us, mercifully putting an end to a Harbaugh-centric postseason. These two brothers will ‘attack this day with an enthusiasm unknown to mankind’, until, yunno, one of them loses.

Following what can only be described as an intense three games, filled with upsets, nail-biting  and of course Buck mode, the only thing left to do is order/fire up a smattering of wings, stockpile the fridge with beer/cider, and enjoy the last game of football during the 2012-2013 campaign. Oh, and to lose money on the game.

For those local to the area, we will be inhabiting South 4th bar in Williamsburg, where the craft beer is cheap and there is rumored to be free food.  Continue reading
